Quick and Easy Recipe:

As I am writing this recipe down it is in the oven cooking so I hope it is good so I don't have to come up with something else. I love to look through cookbooks and get ideas then I make it my own by changing some of the ingredients. The recipe I found had a pork roast stuffed with a sausage/spinach stuffing. I liked the look and idea just not the stuffing so I used a product from the shop instead.

Pork Loin Roast - Butterflied like a book and pounded

Festival Medley Rice Mix - one we carry at the store. This has a combination of dry roasted wild rice with cranberries, almonds and other rices. You cook this according to the instructions on the package.

Take the pounded roast and put the filling on it then the recipe called to roll it - I found it was too think so I folded it and then retied it. I should have had more string to make it hold better. Rub the outside of the roast with olive oil and sprinkle rosemary over it. I put the extra rice around it in the pan, covered it with foil and cooked it at 350 for 1 ½ hours.

We (Emma is my helper in the kitchen) served it with a tossed salad, roasted vegetables, dinner rolls, and peach/raspberry cobbler (Emma's desert creation - of course the best part of the meal).

So are wondering how it tasted??? I thought it had great flavor. The cranberries in the rice really go well with the pork. It was very hard to cut and the rice kept coming out so it wasn't easy to serve. I would have brought out the electric knife next time.

February - the Month of LOVE.

I think of the months of the year by color and this month is the red/pink month. Hearts abound. (Last month was blue - snow/ice/cold. March of course is Green for St. Patty's Day), back to February though - the month of our "Sweetheart Specials." No need to deal with crowds of people at restaurants when you can make a great meal at home for less cost. Just ask us how and we would be happy to help.
